Creative Crescents // BBQ Chicken with Homemade Ranch

       Did you know...you can stuff almost anything into a crescent roll AND its delicious?  Breakfast, lunch, appetizers, dinner, dessert...the possibilities are endless. This has been like finding buried treasure for me.  
       I’m looking forward to sharing tons of these super easy, super yummy creations with you!




BBQ CHICKEN CRESCENTS RECIPE

CHICKEN:
1 Teaspoon Olive Oil
1 Large (Or 2 Small) Chicken Breasts, Cubed
1/4 Cup Onion, Chopped
Salt & Pepper
1/3 Cup BBQ Sauce (My favorite is Sweet Baby Rays!)

OTHER:
1 Pack of Crescent Rolls
1/4 Cup Bacon, Crumbled
1/2 Cup Monterey Jack (Or Cheddar) Cheese, Shredded

TO PREPARE CHICKEN:
In a skillet on medium heat, add olive oil, then chicken and onions. Sprinkle with salt and pepper.  Stir until fully cooked.  Pour BBQ sauce over chicken. Stir and cook 2 minutes.  Remove from heat and cool for 10 minutes. 

TO ASSEMBLE:
Preheat oven to 350.  Line a sheet pan with non-stick foil.  
Unroll crescent rolls and separate into 8 triangles.  Sprinkle each triangle with cheese, then bacon.  Spoon 3-4 pieces of BBQ chicken mixture on top.  Then, pinch corners of each crescent together until closed.  Roll into balls. (Just like you would a meatball!)  Place each ball on sheet pan and bake for 10-12 minutes.

Serve with...

HOMEMADE RANCH DIP RECIPE
1/2 Cup Mayonnaise 
1/2 Cup Sour Cream (Or plain greek yogurt)
1 Tablespoon Olive Oil
1 Tablespoon Lemon Juice
1 Teaspoon Chives
1 Teaspoon Parsley
1 Teaspoon Garlic Powder
Salt & Pepper

TO PREPARE:
In a small mixing bowl, stir everything together!  

Delicious.
