Date Night // Tacorito Bowls

          I'm thrilled to share with you my version of Date Night, right from you're own kitchen.  Just like choosing a restaurant, you can make the same decisions when you're cooking up your own delicious meal!  Do you want a casual, relaxing time?  Something a bit more elegant?  Romantic, perhaps?  YOU CAN DO THAT! And save money while you're at it…that's always a perk for me!
          Also, it seems that many recipes I’ve stumbled across are meant to feed families or possibly whole armies.  So when I'm just cooking for Maffa and I, I usually end up having to half the recipe, or do some sort of adjusting.  Because of that, these Date Night recipes will be simple, but extremely tasty, and perfect for a table of two! (Occasionally with some leftovers ;)
          Tacorito Bowls were based on my at-least-once-a-week urge to visit Chipotle or Qdoba…and it turned out to be a fantastic alternative.



TACORITO BOWLS RECIPE

MEAT:
1 Pound Ground Turkey (or Chicken, or Beef)
1 Packet Taco Seasoning
1/2 Cup Water
RICE:
1 Cup Quick Cooking Brown Rice
1 Cup Chicken Broth
1 Tablespoon Lime Juice
1 Teaspoon Garlic Powder
1 Teaspoon Cilantro
Pepper
TOPPINGS:
Black Beans (I used canned)
Sweet Corn (I used canned)
Mexican Blend Shredded Cheese
Sour Cream
Salsa
Avocado, Sliced
TO PREPARE MEAT:
In a skillet, brown ground turkey over medium heat, stirring to break meat into small pieces.  Drain grease and return to pan.  Sprinkle taco seasoning on cooked meat and add water to the pan.  Stir and bring to a boil.  Cook for 2 minutes and remove from heat.  
TO PREPARE RICE:
In a small pot, bring chicken broth to a boil.  Stir in rice and return to a boil.  Cover pot and decrease heat to low.  Cook for 10 minutes.  Remove from heat and stir.  Add lime juice, garlic powder, cilantro, and pepper.  Stir to combine.  
TO ASSEMBLE:
In two serving bowls, layer or dollop (I love that word):
Rice
Beans
Meat
Cheese
Corn
Sour Cream
Salsa
Avocado
***Or whatever you like ;)

Delicious. 

TINA'S TIP: If you have leftovers, make some nachos tomorrow night!
